The situation: Tuesday evening, my girlfriend has to work late, I have a date…with my TV. The only problem is that I really don’t want to spend a lot of time in the kitchen. Neither do I want to order a pizza or go to a McDonald’s. So I need a quick, easy and healthy recipe, just for me and my TV.
Every month there is a little competition between Dutch and Belgian Food Bloggers, called “Foodblogevent“. The winner of the month chooses the theme for next month and decides the winner of that month. The subject of this month was the situation I was talking about at the beginning. A lot of people made something with pasta. Of course pasta can be healthy, it’s not a lot of work and you don’t need a lot of ingredients. However, I wanted to try something else, because, it happens sometimes that I have a date with my TV and I really don’t want to eat pasta all the time. So this time you won’t find any pasta recipe.
I made a beef burger with ketchup of Belgian endive and Granny Smith and a fresh curry salad. It’s healthier and less work than you think. Let’s call it “Healthy fastfood, perfect for your date with the TV”
What do you need? (4 big burgers) 300 gram of minced meat, a clove of garlic, half an egg (or one egg and more bread crumbs), 50 grams of bread crumbs, pepper, salt, hot pepper powder /// salad, curry powder, yoghurt, olive oil, half of a Granny Smith, half of a Belgian Endive // half of a Granny Smith, half of a Belgian Endive, 1 Tablespoon of Honey, pepper, salt and a bit of butter
What do you do?
Start with preheating the oven. While the oven is working, start with the ketchup. Chop the Belgian endive and the apple. Fry in a bit of butter and water. When cooked, add the honey. Stir a couple of minutes. Blend it and put aside. While the apple and endive are cooking, mix the minced meat with egg, bread crumbs, spices and garlic. Make 4 (or more) hamburgers and fry it in a bit of butter or olive oil.
Normally your oven is hot right now, so put the bread in the oven and toast it. While the hamburgers are frying and the bread is toasting, mix the yoghurt, curry powder and olive oil. Mix the salad with the dressing. When your hamburgers and bread are ready, make hamburgers…and that’s all folks!
I know that one of the goals of the challenge was to use not a lot of ingredients. I really didn’t use a lot. I guess everyone has curry powder, pepper, salt, an apple, an egg, bread crumbs, garlic and tomato in his fridge. You can also use some old bread. The only thing you maybe have to buy is Belgian Endive or minced meat.
It maybe looks a heavy meal, but it’s really not so heavy. If you want, you can make a smaller burger. An other goal was also that I doesn’t ask a lot of time. I started at 6.10pm and finished my plate 6.45pm (and I did one phone call).So it took me a little bit more than half an hour to prepare everything.
