As I told you already I made my own birthday cake. I also promised to write down the recipe. So here’s the recipe.

What do you need? (24 cm), 3 eggs, 2 egg yolks, 150 grams of sugar, 3,5dl of whipped cream, 6 Tbsp of lime juice, powder sugar, finely grated zeste of one lime, one shortcrust pastry shell (you can also make this pastry by yourself, but I didn’t have enough time)

What do you do? Preheat the oven to 350 degrees F or 175 degrees C. Whip the eggs, egg yolks and sugar a minute or two till the mixture has a light color. Whip the mixture with the whipped cream, lime zeste and the lime juice. Pour into a prepared shortcrust pastry shell. Put it in the oven, bake for 40-45 mins or until set. Cool. Before serving the pie, put it one hour in the fridge. Serve with extra lime slices and powder sugar.

The recipe is based on a recipe of a book, called “Bakken”. The original name is “baking” of James Peterson. It’s a very useful book with the basic, must-have recipes for every baker and a lot of pictures. A must-have, if you ask me.
